Continuing its celebrated legacy; Hotel Café Royal takes guests on a sumptuous culinary journey across a multitude of outlets including Sushi and Grill Restaurant led by Laurent Tourondel, 3 bars, a unique pastry project Cakes & Bubbles by Albert Adria, award winning Afternoon Tea, In Room Dining Experience and Private Dining & Events areas. Working under the direction and guidance of our Executive Chef Marcus Klumb, our talented culinary team showcase both flair and creativity in combining quality British ingredients with a cosmopolitan mix of International, Italian and French influences to create an elegant, yet contemporary themes in keeping with the Café Royal’s history and hallmarks of exceptional quality and style.

Our culinary team works within one of London’s newest and most state of the art kitchens featuring all of the latest specialist culinary equipment. As well as our main production kitchen there are a number of smaller specialist kitchens directly servicing each of our main outlets. We also have our own large pastry kitchen with its very own bakery and chocolate room; a must for any talented pastry chef. All of our bread and pastry is made fresh onsite every day from our afternoon teas to our range of freshly baked croissants, cakes and handmade chocolates.

Your Role:

As our Head Pastry Chef you will become part of a special culinary team that requires dedication, passion and deep knowledge of products to successfully master the delivery of our creations and services in an ever consistent and timely fashion.
Working as part of a senior kitchen team you will demonstrate a flexible and adaptive hands-on approach in order to lead and guide a brigade of 8 talented patisserie professionals. You’ll showcase knowledge, skill and creativity for combining and working with quality British and international ingredients across a range of disciplines including bakery, chocolate & sugar work, desserts and classical patisserie. With an in depth and expansive knowledge of your trade you will be responsible for the continual development of new dishes for our menus. You will of course be responsible for the sourcing of ingredients, the creation of menu specifications and recipe costings to ensure the correct pricing and food cost percentages are achieved.

You will also be an exceptional teacher, mentor and coach in order to develop your team’s pasty skills so that they reach their full potential; not only in the art of pastry but also over a range of kitchen skills including the daily sourcing of ingredients, development or menus and dishes, control of products, stock control and food cost; and of course ensuring that food hygiene is maintained to the highest level and HACCP controls are implemented.

PROFILE
Your Profile:
  • You will currently be an experienced Exec or Head Pasty Chef, with proven experience working within a large multiple outlet hotel or large restaurant operation; we would also welcome applications from Senior Pastry Sous Chef ready to take on the next step in their careers
  • Be professionally trained with minimum NVQ Level 3 qualification in Patisserie or an international equivalent
  • Have previous experience in the development of menus and retail products
  • Have previous experience of managing a large kitchen brigade
  • Be well versed in all aspects of kitchen management including budgeting and control of food cost
  • The desire to join a hotel to grow and develop with a new and expanding luxury hotel group part of Leading hotels of the world
  • A team player with the flexibility to work early mornings, late evenings and weekends in order to support the operation
