Martell Mumm Perrier-Jouët, prestige Cognac and Champagne branch of Pernod Ricard, is composed of the oldest cognac House and two of the most prestigious champagne brands in the world.

To support the global brand ambition on champagne, the Brand Advocacy team is currently seeking his/her Perrier-Jouët Chef, located in Epernay.

Position purpose

As Perrier-Jouët Chef you will design the gastronomic signature for Perrier-Jouët, coordinate the gastronomic operational management on Maison Belle-Epoque and Cellier, contribute to elevate the wine speech and embody the Perrier-Jouët’s style around nature.

Key Responsibilities

1. Design the gastronomic signature for Perrier-Jouët

  • Translate the brand purpose and wine style into a gastronomic signature

  • Integrate a strong footprint based on nature and florality

  • Select carefully local products to support local suppliers and limit carbon footprint

2. Coordinate kitchens’ management

  • Manage suppliers, equipments and stock

  • Ensure that a sustainable approach is well integrated in the whole process

  • Adjust the different offers (menus) according to the audiences

  • Manage the Home production (verger + jardin potager) and budget

3. Elevate the wine speech and raise the visibility of the gastronomic signature

  • Contribute to create videos content related to food & wine pairings

  • Animate food & wine pairings sessions with Markets’ stakeholders

  • Coordinate and attend local activations in Markets to ensure a consistent gastronomic signature

4. Team Management

  • Organise and structure the team (extras)

  • Ensure fluid planning management of the seasonal brigade

  • Guarantee a high level of engagement, motivation and implication



PROFILE
To be successful in the role you have :

  • 10 years of proven experience as a Chef in prestige restaurants

  • Experience in working with international teams and international type of cuisine

  • Creative cuisine knowledge

  • Wine knowledge, Food & wine pairing understanding

  • Suppliers and budget management skills

  • Ability to work transversally
