Internationally acclaimed five red star hotel, The Chester Grosvenor and Spa, invites you to indulge in a most impressive and comprehensive selection of Dom Pérignon’s ‘Oenothèque’ vintages and there are complimentary guest rooms and suites* for those who cannot resist sampling ‘the luxury of extra time’.

Legend has it that upon the creation of ‘the best wine in the world’, the young Benedictine monk, Dom Pérignon, cried out ‘I am drinking stars!’ Over 300 years later Dom Pérignon is still revered as one of the best champagnes in the world; a luxury symbol of hedonism that broke with its religious heritage to seduce and excite the world of luxury, from the courts of ‘The Sun King’ in Versailles to the modern influencers of today.

With each vintage, Dom Pérignon reinvents itself and dares to take risks. The Oenothèque collection (meaning ‘Library of Wines’) is testimony to the ‘Chef de Cave’, Richard Geoffroy’s quest for perfection, creating ‘a wine whose style defies time’. From each vintage, a small selection of bottles is retained for further ageing, until the wine reaches a new peak of intensity. These stages of ageing are known as ‘plénitudes’. This ageing takes a minimum of thirteen years, hence the ‘2nd Plénitude’ of 1995 was released last year. Along with 1995, other wines in the collection include 1964, 1971, 1975 and 1976, all of which are stocked in The Grosvenor wine cellars.

‘For me, what makes Oenothèque so remarkable is the extra dimension that the late disgorgement makes to the wines. Those extra years spent on the lees (the yeast deposits) give the wines a resounding richness that fills the palate with complex flavours and seems to last for ages. I’ve been privileged enough to have tasted many of the Oenothèque wines, from the 1959 through to the younger second plenitude wines of the 70’s and 80’s to the first plenitude wines of the 90’s. They all have something unique to offer, and while they remain essentially Dom Pérignon, they each have their own defining character.’

-Garry Clark, Sommelier at The Chester Grosvenor and Spa.

Dom Pérignon is offering guests, who purchase a bottle of Dom Pérignon Oenothèque champagne, a complimentary guest room or suite to enhance their experience.

The complimentary room is dependant upon the champagne purchased. A 1995 release, priced at £500, guests would receive a stay in an Executive room; a 1976 (£800) and a 1964 (£975) release, guests enjoy a luxurious Junior suite and for the 1975 (£1900) and 1971 (£2100) releases, an exquisite Master suite. Exclusive boxed Dom Pérignon branded glasses and a silver, branded cork-shaped box are yours as a keepsake with all except the 1995 release (when your stay is pre-booked).
