F&B Manager / Director - Sumba, Indonesia (M/F)
Cap Karoso, a multi-award-winning resort (Ahead Award Best Hotel in Asia, Travel + Leisure It List, Condé Nast Traveler Gold List, Tatler Asia The Best 100), is looking for an exceptional Food & Beverage Manager to join its team. Located on the idyllic island of Sumba, just a 1-hour flight from Bali, the resort boasts 47 rooms, 20 villas, 3 restaurants, 2 bars, and a 3-hectare organic farm.
Cap Karoso prides itself on offering a visionary gastronomic experience, with approximately 15 guest chefs in residence annually, numerous signature events including the Sumba Food Festival, and an emphasis on delivering seamless and memorable F&B experiences. The F&B Manager will play a key role in leading and inspiring the entire team, ensuring the resort’s outlets and events operate at the highest level of excellence.
Profile:
Experienced in managing multiple outlets in luxury hotels or resorts.
Skilled in training, mentoring, and motivating F&B teams.
Highly organized, hands-on, and able to manage complex operations.
Comfortable working in a remote island location and embracing challenges.
Familiarity with Indonesia and local suppliers is a plus.
Passionate about delivering world-class guest experiences and high-end service.
Fluent in English; additional languages are a bonus.
Responsibilities:
Lead and manage all F&B operations across the resort, including restaurants, bars, and in-villa dining.
Organize, oversee, and coordinate major events such as the Sumba Food Festival and guest chef residencies.
Ensure consistent service standards and operational excellence in all outlets.
Develop, train, and mentor the F&B team, fostering a positive and professional work culture.
Collaborate with chefs, marketing, and management on menu concepts, special events, and guest experiences.
Manage budgets, inventory, and supplier relationships, ensuring cost efficiency and quality standards.
Monitor guest feedback and implement improvements to exceed expectations.
Additional Information:

Strong leadership and a proactive approach are essential.
English required; knowledge of Bahasa Indonesia is an advantage.
