New gourmet experiences debut at Banyan Tree Seychelles

Set against the stunning Seychelles islands backdrop of the deepest blues, Banyan Tree Seychelles has made it their imperative to introduce a range of intimate, exceptional dining experiences and culinary chef classes for guests and fans of the award-winning resort.

Specially created and conceptualised to further epitomise the romance of travel, four exclusive dining experiences are available per night, limited to one table per experience. These are available both in-villa and outdoors, complementing the spectacular range of cuisines available in the resort, including the renowned modern Thai restaurant, Saffron; the impeccable Creole fine dining Chez Lamar, and eclectic international dining room, Au Jardin D’Épices.

The ultimate for luxury seekers is found at the Presidential Villa’s Sea and Stars experience. A sumptuous dinner by the private poolside of this exclusive villa, accompanied by premium Champagne, six-course dinner, and dozens of flickering candles, is followed by a once-in-a-lifetime overnight stay in the Presidential Villa. Dinner is a lavish affair, with gastronomic creations comprising the best in regional fine dining, such as ceviche of the freshest hand dived scallops, black prawn and crab ravioli served with apple poppy seed sabayon, and glazed guinea fowl in a light ginger beurre blanc (white wine reduction).

Pick a favourite location on the beautiful white sands of Intendance Bay, and return at dusk to experience a sizzling Grill on the Sands. A personal dining host tends to the glowing embers of the barbeque grill, expertly searing the diner’s choice of fresh ocean catches, African barbecue, or Seychellois style tropical treats such as banana-wrapped reef fish and spiced pork loin fillet, served with Creole tomato sauce and coconut lime sauce. Chef’s touches can be seen in the accompaniments such as balsamic tomatoes with mozzarella and basil, and a delightful chocolate mousse finish.


Perfectly located in an iconic and romantic wooden pavilion, the Moonlight Gazebo presents the ideal opportunity to make overtures to a loved one. In fact, the setting on Intendance Beach and the swelling crash of ocean waves might prompt serious propositions over the appetising options on the degustation dinner. For seafood fanatics, the meal features crispy crab cakes on mango cucumber relish and organic greens, and pan fried red snapper on roasted pumpkin mash. Red meat lovers will enjoy the delectable chateaubriand, a gourmet tenderloin served with Béarnaise sauce.

Lest you have an appetite for adventure, have a short climb up to Champagne on the Rocks, the new heights in outdoor indulgence. Set on a cliff overlooking the resort, a specially built floating canopy invites you to rest and contemplate the sunset dipping into the horizon of the Indian Ocean. This dreamlike experience is accompanied by a bottle of chilled Champagne Rose and canapés served by a private butler.

Chef Du Jour
In addition, a range of personalised Creole cooking classes are also available for the culinary-minded guest. A jaunt to the local market in Victoria for ingredients is followed by a menu-planning session, where the guests experiences what it is like to be a chef through choosing their dishes as well as preparing it from scratch. The focus is on providing a first-hand experience to the guest on what it feels like behind the kitchen counter. Recipes are provided in French, German and English.
