Paulo Figueiredo Joins Aqua Restaurant Group for One-Year-Only…. Coming soon to a bar near you!

Mix the finest cocktails with fabulously handsome good looks and you get Paulo Figueiredo - aqua restaurant group’s new Mixologist who promises to get drinkers hearts racing in Hong Kong.

With enough knowledge of liquors to make a cocktail that will quite literally take your breath away, Paulo, 25, has been stolen away from London for one-year-only to be Group Mixologist for aqua restaurant group’s Hong Kong outlets.

Hailing most recently from well known bars, Lab Bar and Ronnie Scotts in London, Paulo will be bringing the city’s cocktail scene up to that of London and Europe with a series of cocktail workshops, tastings and promotional events over the space of 12-months to create a list of drinks the It crowd will be sipping by summer.

Even if the recession is hitting hard, at least Paulo will ensure Hong Kongers are drowning their sorrows on the best cocktails in town!

Like a chef, he will create artwork style cocktails using fruits, vegetables, spices and other flavors with the precision and delicacy used in cooking, creating cocktails that reflect the Hong Kong environment with exotic flavours, interesting ingredients and some spiced up classics.

He is skilled in creating one-off cocktails to suit a drinker’s mood by quickly analysing their likes and dislikes through a round of short questions when ordering.

Throughout his whirlwind tour of aqua outlets, Paulo will launch a brand spanking new cocktail menu at aqua spirit, host a cocktail school teaching tips and tricks - also at aqua spirit, lead Martini Madness at tivo, work with Executive Chef Tatsuya Iwashasi to develop Saki and Sushi Japanese inspired cocktails at wasabisabi, host a cocktail school at Yun Fu – do you know your Bloody Mary from your Margarita and device a Chinese cocktail menu too.

Originally destined to be a break dancer, a dislocated knee halted Paulo in his tracks during teenage years when he realised the best place to show off his talents would be behind a bar serving drinks and incorporating his moves!

Originally from Portugal, Paulo has worked his way around the world’s continents mixing and shaking. Initially working in South and then North America, Paulo moved to London and worked in some of the city’s finest and well revered bars, including the legendary Lab Bar, where he was instrumental in designing their award winning drinks list, the iconic Ronnie Scotts and finished his time in London working for probably the most influential bar tender of our time – Salvatore Calabrese.

Deciding it was time to venture on to pastures new, Paulo gathered up his bar spoons, jiggers and his double strainer and spent the next twelve months working in some of Europe’s most glamorous cities; from Milan’s fashion week, to Cannes’ film festival, MTV parties in Paris and the occasional house party where he would be the drink designer for ‘pop superstars’, world leaders and the occasional Hollywood A lister!

Next stop - Hong Kong.

Having never had the opportunity to work in Asia, a chance meeting with the owner of aqua restaurant group, David Yeo, has made his world wide tour just about complete. Paulo will work with the aqua restaurant group over the next twelve months, as resident drinks designer, initially based at aqua spirit where he will has devised a brand new cocktail list, using his experience over the last few years but utilizing the abundance of produce that Hong Kong has to offer.
