Widely cherished by gourmets as the white diamond of the kitchen, the highly sought-after Alba white truffle is in season. Chef Ivan Musoni of the Michelin-starred Ca Vegia restaurant in Pavia, Italy will kick-start the Alba White Truffle promotion on 20 October 2009 at Kowloon Shangri-La, Hong Kong’s Angelini Italian restaurant.

Chef Musoni will be presiding over the Angelini kitchen from 20 to 25 October 2009 and showcasing his culinary skills and talents with his specially designed à la carte and set menus. Guests can enjoy gourmet wonders featuring Porcini Mushroom with Italian Egg Yolk and Alba White Truffle; Crusted Burrata Cheese with Fresh Tomato Reduction and Fried Basil; 18-month Aged Culatello Ham with Calabria Red Onion Brioche Bread; Home-made Green Lasagnette with White Meat Ragu and Black Truffle; Artisanal Spaghetti with Mediterranean Black Mussels and Dark Chocolate; Black Angus Beef Tenderloin wrapped with Lardo, Potato and Pinot Nero Wine Sauce; Seared Bluephin Tuna with Zucchini and Cherry Tomato Confit; and Cod Fish with Eggplant Purée and Balsamic Vinegar Sauce. For a sweet finish, guests can indulge in Home-made Milk Gelato with Alba White Truffle and Home-made Tiramisu with Matcha Green Tea.

In addition, Angelini Head Chef Vittorio Lucariello is taking advantage of white truffles, which grow almost exclusively around the town of Alba, by incorporating them into a special four-course dinner menu, which will be available from 20 October 2009. The set dinner, with each course creatively fused with Alba white truffle, features Truffle Water Poached Sardinian Red Shrimp; Tagliatelle with Porcini Mushroom Dust, Black Pepper and Parmigiano-Reggiano; a main course of either Wild Cod Fish with Raw Salmon Egg, Cannellini Bean Purée or Wood Oven Roasted Veal Tenderloin with Artichoke Ragu and Poached Italian Egg and ends with Caramelised Crème with Chestnut Heart. The promotion will run until the end of the truffle season.

Angelini delivers authentic Italian cuisine using only the finest ingredients of the season, accompanied with an extensive wine list of over 100 Italian wines. Guests are welcome to enquire for wine suggestions to complement their truffle dishes.
