The first international school of tea, stemming from a partnership involving two major players, Institut Paul Bocuse and the internationally famous brand of ethical tea, Dilmah, a producer in Ceylon, originates from the idea of creating an original training program built around the drink the most consumed in the world after water. In France, two out of three people regularly drink tea and the market has enjoyed steady growth. This trend can be explained by the increasing desire for naturalness regarding a product that is rich in health benefits. Yet, one has to know its subtleties to appreciate its richness.

The purpose of the Dilmah School of Tea at the Institut Paul Bocuse is to train students and foster awareness of the art of serving and enjoying tea, and like for wine, to understand the harmony between dishes - teas, and also to create original menus based on tea using its various flavors, as well as cocktails with and without alcohol.

Having a cup of tea is an agreeable moment of sharing, relaxation, pleasure and ecstasy. Like wine, which is appreciated differently depending on the meal, tea requires the mastery of the art of tasting and the knowledge of infinite varieties of tea: from the rareness and finesse of black tea to white tea, going on to green teas or Oolong semi-fermented: each tea, depending on its locality of origin, possesses its own character. Each customer chooses the moment of consumption based on personal moods and desires. With Dilmah, this unique experience becomes an opportunity “to educate” regarding the culture and preparation of tea: the influence of climate, rainfall, soil make-up, the art of producing the best tea …

Beginning with the 2009 school year, teaching about tea will therefore be an integral part of the program for 1st year students in International hotel and restaurant management at Institut Paul Bocuse. Also ensuring the training of faculty, Dilmah has elaborated two training modules at Institut Paul Bocuse’s request:
- A theoretical module taught on Institut Paul Bocuse premises to acquire the fundamentals of tea,
- A practical module at the school’s pedagogical ‘Saisons’ restaurant and in the heart of Lyon at ‘Le Royal’ hotel school, the first French hotel where the presentation of teas of pure origin, the Gourmet t-Series by Dilmah, will be developed in both the restaurant and the salon "Côté Bellecour" in an Asian "Art of tea" atmosphere.
