Sonesta Maho Beach Resort & Casino in St. Maarten welcomes Iwan Pennings as executive chef.

Chef Pennings brings along the expertise of 15 years in the European and Caribbean culinary industries. His new position at Sonesta Maho will include the creation of innovative menus for guest and event dining, as well as leading his culinary team to new levels of excellence.

“It’s an honor to join the most notable resort on the island of St. Maarten, which itself has a reputation as the culinary capital of the Caribbean,” says Chef Pennings. “I welcome the chance to lead a strong team to collectively combine inventive flavors and exceptional quality for the ultimate guest dining experience at Sonesta Maho Beach Resort & Casino.”

>From 2002-2008, he worked with World ResidenSea,, a residential club association aboard a 644-foot private luxury yacht, where he earned the position of chef de cuisine.

A Dutch native, Chef Pennings attended culinary school in the Netherlands, earning an advanced chef’s degree. He further honed his skills in prominent Amsterdam restaurants, including NH Barbizon Palace, Restaurant de Giesser Wildeman and Restaurant Vermeer.

Sonesta Maho Beach Resort & Casino celebrates Caribbean and international cuisine with three restaurants. At the Ocean Terrace Restaurant, guests enjoy bountiful dining options from fun, market-style food stations and a laid-back ambiance. The beachside Palms Grill Restaurant & Bar is open daily for breakfast, lunch and dinner and features menu choices ranging from grilled favorites, sandwiches and freshly prepared main courses. For a more refined atmosphere, The Point Restaurant overlooks the Caribbean Sea and offers gourmet creations with a Caribbean flair.
