The glorious white truffle season is upon us and Chef Philippe Orrico has prepared his dedication to the most prized of all fungi. From 25th October to end of November, Hullett House’s signature fine dining restaurant St. George welcomes the arrival of the seasonal delicacy, the Alba White Truffle with nine sensational dishes.
Chef Philippe Orrico says “I believe that the wonderful aromatic Alba White truffles should speak for themselves. The other ingredients in my dishes are just there to complement the intense and unique aroma of the truffle. Following my philosophy of cooking, I take two approaches in my menu - the first is the ‘Traditional’ and ‘Classical’ way, with a strict selection of ingredients according to time honoured traditions. The second is more interesting for me, the ‘Creative’ and ‘Modern’ way, adding a small twist to the dishes which the diner would not normally get with truffles – a surprise element!” The nine white truffle dishes Michelin-star Executive Chef Philippe Orrico has created follow his philosophy of cooking and are grouped in four sections – ‘Traditional’, ‘Classical’, ‘Creative’ and ‘Modern’.
Diners at St. George will be tempted by nine dishes - “Traditional” Risotto Carnoroli with Alba White Truffle, the dish of choice for Italian wedding banquets, the ‘Classical’ with dishes such as Veal Banquette, Pearl Onion and Alba White Truffle – the ‘Creative’ featuring Chef Philippe’s special creation Roasted Scallops, Risotto Rice Cream with garlic and Parmesan, Apple with Cinnamon and Squid with Alba White Truffle – and the ‘Modern’ with mouth-watering dessert White Chocolate Feuillantine and White Truffle Ice Cream and Chef Philippe Orrico’s favourite ‘Modern’ 63° eggs with hot parmesan foam and burned flour shortbread. All Alba White Truffle dishes start from HK$368, plus 10% service charge.
St. George is one of five unique dining venues of Hullett House, the intimate, design-led heritage development set within the gracious and historical former Marine Police Headquarters dating back to 1881. It is located on the first floor of Hullett House which can be found at 2A Canton Road, Tsim Sha Tsui, Kowloon, Hong Kong, opposite the Cultural Centre and just a short walk from the Star Ferry.
