Chef Roberto has always dreamed to be a culinarian at a young age. He began his career by working in famed Italian and international restaurants around the world to foster his knowledge of different food cultures and to enhance his culinary skills upon obtaining a diploma certificate in Hotel Management in Alghero, Italy. He returned to his hometown of Sardinia with a wealth of experience and opened his own restaurant, S’Apposentu and S’Apposentu al Teatro Lirico in 1998 and 2002, respectively.

In 2010, Chef Roberto transformed the historical Art Nouveau-style building, which was once the home of a pasta baron, into a sophisticated fine dining restaurant, Ristorante S’Apposentu, in Siddi, a Sardinian village. His diversified and exquisite culinary creations using the freshest ingredients in the region has gained him great appreciation from gourmets all over Italy and a Michelin-Star accolade in 2013. His dedication to preserving the regional agriculture allowed him to open his own haute cuisine academy, contributing to the retention of Sardinia’s cooking heritage.

Foodies, gourmets and casual taste-seekers can indulge in a meal co created by Chef Roberto and Chef Marco, who will interact with guests throughout the evening. Guests can opt for a three-course, four-course or five-course dinner menu.

The fine dining journey will begin with Onion Ice Cream with Home-Smoked White Fish and Crispy Ham or Carrot Soup, Marinated Artichokes, Fresh Almond and Red Shrimps with Burned Sesame, followed by Egg with Asparagus, Cheese Cream and Truffle or Pumpkin Praline and Cave Cheese with Pecorino Fondue and Bacon.

Diners can also look forward to Tallutzas Pasta with Shrimp Ragout and Lemon Flavoured Clams or Pumpkin Ravioli filled with Soft Cheese and Truffle, Baby Onion, Bacon and Sage Sauce. For the main course, guests can choose between Crispy Pork with Mirto Sauce and Rosemary Thistle and Amberjack Roasted with Cooked Vegetables, Fresh Almonds and Orange Sauce. Guests can end the meal on a sweet note with Homemade Ice Cream with Saffron from San Gavino, Almond Gateaux and Arbutus Honey or Honey and Truffle Ice Cream with Lemon and Ginger Flavoured Pear.

The three-course dinner menu is priced at only HK$780 per person, the four-course dinner menu is priced at just HK$880 per person and the five-course dinner menu is priced at H$980 per person.
