Most notably, Gabrielli worked under Heston Blumenthal in London, the pioneer of multi-sensory cuisine and holder of three Michelin stars which significantly shaped Gabrielli’s expertise.
After five years abroad, Gabrielli returned to Italy to work alongside star chefs such as Antonio Guida at the celebrated Pellicano restaurant in Porto Ercole, Tuscany and chef Vito Mollica, before joining Hotel Principe di Savoia in 2019 as a sous chef.

His dishes are inspired by the desire to showcase the best of Italian cuisine and its finest ingredients. Under Chef Gabrielli's creative direction, Acanto introduces a revamped menu featuring a six-course tasting experience and a dedicated section celebrating classical Italian cuisine, inspired by his Lombard roots.
This culinary homage is elevated with a touch of originality and innovation, utilising the highest quality raw materials. On Sundays from 12.30 to 15.00, Acanto will be offering a diverse brunch with five themed sections featuring hors d'oeuvres, vegetarian recipes, oysters and raw seafood, DOP cheeses and cured meats.
Chef Gabrielli creates express dishes using seasonal ingredients, complemented by desserts from pastry chef Beniamino Passannante.
Acanto offers a relaxed and warm ambiance, complemented by floor to ceiling windows with views of the Italian-style garden.
Whether it’s a business lunch or an intimate evening, Acanto provides an inviting atmosphere for both corporate and leisurely occasions.
