Award-winning Mandarin Orchard Singapore, Meritus Hotels & Resorts’ flagship hotel in Singapore, announced the appointment of Martin Braecker as the new Executive Chef.

A German national, Chef Martin will be overseeing culinary innovations and standards for Mandarin Orchard’s renowned restaurants and bars. He will also be tasked with the development of creative menus for themed events, meetings and banquets to drive the profile of the iconic hotel as a preferred venue for functions on prominent Orchard Road.

Chef Martin is no stranger to the arena of fine food and impeccable restaurant quality, having once honed his skills in Michelin-starred Gault & Millau restaurant. A 22-year veteran in his field, Chef Martin was previously with Starwood hotels in Dubai and China, respectively, prior to joining Mandarin Orchard Singapore.

Specialising in Cuisine du Marché, Chef Martin believes such foundation allows him the flair and creativity to bring out the best flavours from using only the freshest of ingredients and the best produce available. His penchant for contemporary cuisine is evident in his cooking style, taking meticulous pride in presenting delicious, beautifully plated dishes. Having worked in Asia, Chef Martin’s expertise also extends to oriental cuisines including Thai.

Armed with an impressive list of training certifications and a master culinary degree, he also has to his name a myriad of industry awards and culinary championships.
