Chef Dahmani’s impressive background includes working with world-renowned Chef Joel Robuchon and Chef Michel Moisan at La Vieux Metier, a Michelin rated restaurant in France. After a year with Le Vieux Metier de France, Dahmani ventured to England as Chef De Partie at the Michelin five-star, Oakley Court Hotel. Chef Dahmani has also worked alongside James Beard Award-winning Chef Robin Haas.

 

In addition to his professional training in the kitchen, Chef Dahmani brings professional knowledge in research, design and development of food and beverage programs as he has worked with restaurateur Josef Keller in conceptualizing a consortium of French-style restaurants.

 

Chef Dahmani has received notable honors including Nominee for Best Southeast Regional Chef by the Miami Herald and Food & Wine’s Best Rising Chef, as well as mentions in The New York Times, and Bon Appetit. Chef Kamel has had the privilege of preparing exclusive meals for high-profile clients and celebrities, such as Sharon Stone, Sylvester Stallone, Sir Sean Connery, Cindy Crawford, Prince, Michael Jackson and Queen Rania of Jordan.

 

Chef Dahmani holds bachelor’s and master’s degrees in culinary management and innovation from the Institut Paul Bocuse in Ecully, France as well as a degree in hospitality administration from Universite des Sciences et Technologies de Lille.

 

Most recently serving as executive chef at the Viceroy Miami, Chef Kamel is no stranger to the challenge. “As a seasoned executive chef, we are excited to have him on board as he brings a wealth of culinary knowledge and creativity and we look forward to transforming the hotel’s culinary offerings,” said Makoto Yasuhara, general manager, Hilton Guam Resort & Spa.
