Innovative small plates feature artfully inspired ‘New American Cuisine’

The Dining Room at The Langham, Huntington Hotel & Spa is pleased to announce Chef de Cuisine Michael Voltaggio’s new menu, debuting on Friday, July 31. Chef Voltaggio’s menu features a selection of innovative small plates showcasing artfully inspired New American cuisine prepared using classic discipline and modern trends. Utilizing the bounty of seasonal produce that California offers while showcasing the best quality ingredients from around the globe, Chef Voltaggio’s menu encourages a multi-course experience, allowing guests to create their own culinary journey tailored to their specific tastes.

The menu is comprised of small savory and sweet plates, ranging from the lightest to the heaviest dish. Chef Voltaggio recommends that each guest choose three dishes from the savory section and one dessert, along with beverage pairings, to fully experience the diversity of the menu.

Some new menu items include: Tomato Tartare with parmesan over-easy and tapenade powders; Pacific Yellowtail with soy-watermelon, sea sponge and fresh wasabi; Rougie Foie Gras with grapefruit-compari puree, parsnip and soy caramel; Pastrami Pigeon with rye infused jus, brussels-kraut and puffed gruyere cheese; Wagyu Short Rib with textures of broccoli, tamarind and horseradish styrofoam; and Miso Strawberry Shortcake with nitro frozen yogurt and tarragon-arugula.

Chef Voltaggio joined The Dining Room in July of 2009 following a year as Executive Chef of The Bazaar by José Andrés at The SLS Hotel in Beverly Hills, Calif. He is also a contestant on season six of Bravo’s EMMY and James Beard Award-winning series, Top Chef.

For the last two years in a row, The Dining Room at The Langham, Huntington Hotel & Spa has been awarded a coveted one-star rating from the Michelin guide. The honor follows The Dining Room’s “Best Service” and extraordinary scores in the 2009 Zagat Los Angeles/Southern California Restaurants Guide along with numerous other accolades such as Gourmet magazine’s “60 World’s Best Hotel Dining Rooms,” a 3 Star Rating by The Los Angeles Times, “50 Best Hotel Restaurants” by Food & Wine and California Homes Magazine’s “#1 Hotel Restaurant.” The Dining Room will feature Chef Voltaggio’s new menu through the remainder of 2009 and will undergo a renovation and repositioning in early 2010.

The Dining Room is open for dinner Tuesday through Saturday with seating from 6:30 p.m. to 9:30 p.m.
