Hilton: Michelin Guide Third Star Awarded To La Pergola

Rome Cavalieri Hilton's Signature Restaurant is Worth a Special Journey
ROME, Italy (November 30, 2005) - The MICHELIN® Guide announced today that La Pergola, helmed by acclaimed chef Heinz Beck, has won the guide's most prestigious rating the coveted third star. The restaurant, set on the top floor of Rome Cavalieri Hilton with "gasp-worthy" views of the Eternal City, is Italy's first five-star hotel restaurant.

Michelin stars, in any amount, are bestowed only on those restaurants that deserve a traveller's special attention. In Michelin parlance, one star indicates "a very good restaurant in its category a good place to stop on your journey." Two stars, especially rare, denote "excellent cooking worth a detour." Only an elite few are given three stars, signifying "exceptional cuisine worth a special journey." The guide is famously reluctant to grant three stars to hotel restaurants.

The restaurant interior presents frescoed ceilings, warm cherry wood interiors and fine furniture, tapestries and paintings from the 18th and 19th century, combined with the unparalleled view of Rome creates an elegant setting for the gourmet cuisine. Candlelight dining with "gold-plated" silverware is a feature of summer evenings on the adjacent panoramic terrace, which offers a breathtaking view of the most famous Roman monuments.

Service here is extravagant - with vintage balsamic vinegars, salts and peppers from different part of the world and a large selection of rare teas and coffees. The service ratio appoints 17 waiters to 50 guests. The recently renovated and expanded space frames the panoramic view perfectly. The Chef offers a light cuisine of Mediterranean flavours in continues evolution. His "Fagottelli La Pergola" with liquid pecorino cheese and egg-yolk filling produces what Heinz Beck calls "an explosion of warm, rich flavour," is legendary.

"My intention," Chef Beck says, "is to transmit emotions through harmoniously balanced aromas, flavours and colours sensory stimuli which are intertwined and blended in suffused and refined surroundings."

Recent prizes include Wine Spectator's Grand Award in 2005, in honour of the restaurant's new double-tiered, 53,000-bottle wine cellar. A wide selection of the rarest Italian and international wines is displayed on the 2.500 label wine list, including 19th century and legendary cult wines.
Heinz Beck says "I would like to thank the guests that have visited me from all over the world and especially the hotel's owing family who believed in me through these years and supported the restaurant with aimed investments that have made "La Pergola" a reference to exclusive Italian dining experience.

Recent restaurant renovations, which also include a lavish new cigar lounge" are only one part of a $50 million renovation of Rome Cavalieri Hilton. More updates for the property are being undertaken including the "Via Condotti Gallery" a $6 million shopping area with the major international luxury brands, modelled after Italy's famous Via Condotti.

The MICHELIN® Guide, serving as an international symbol of culinary excellence, recently saw resurgence in popularity in the U.S. when it launched its first New York City guide. As part of the evaluation process, Michelin inspectors conduct anonymous visits to restaurants and hotels. The guide has become an indispensable resource for gourmet diners and tourists for its famously unbiased reviews.
