Legends- a Naiade Resort- is pleased to announce the appointment of Mr. Stephane Brallet as its Executive Chef.
Stephane has worked in 5-star properties in Canada, Mexico and various islands in the Caribbean, including a position as executive chef at the One&Only Ocean Club in the Bahamas. Before joining Legends, he was Executive Chef at the Grand Mauritian Resort & Spa in Balaclava, Mauritius.
A great lover of local and fresh ingredients and a wizard of island food, Stephane finds inspiration for his dishes and menus in the lessons learned in the kitchens of chefs such as Michel Plas, Bernard Loiseau, and Alain Passard. However, the most pervasive influence in the food that he has started delivering for the guests of Legends, is that of the anonymous masters who created the incredible Mauritian cuisine: farmers, fishermen and the local women, who humbly deliver amazing daily feasts for their families.
Stephane has a true gift to uncover the secrets of traditional ingredients and techniques, and to bring them to the restaurant table, in thoughtful and balanced menus that tell countless stories of the island and its bounty and people.
Under his supervision, the dedicated team in the kitchens and restaurants of Legends will undoubtedly lead the guests on a delicious and innovative culinary journey.
