Standout food and beverage experiences, culinary excellence and superb venues are essential to the guest experience at Accor’s hotels around the world.

In 2022, Accor’s culinary stars have aligned, with kitchen and bar teams creating richly authentic experiences, curating unique and nourishing menus, while attracting lively mixes of locals and international travelers. For a small sampling of what’s in store for guests this year, do read on.

ATTRACTING TOP TALENT

Raffles London at The OWO has inked an exclusive partnership with world-renowned Michelin-starred chef Mauro Colagreco. The acclaimed chef is known for his category-defying cuisine and was most recently awarded "Best of the Best" by The World's 50 Best Restaurants 2021 for Mirazur.

Chef Colagreco will collaborate with Raffles to create two unique restaurants and an avant-garde Chef's Table at the highly anticipated property, set to open from late 2022. The three multi-sensory dining experiences will be housed within Whitehall's most storied rooms and are sure to become destinations in and of themselves.

Philip Mahoney has joined Accor as Vice President of Food & Beverage for India, the Middle East, Africa and Turkey. A key focus for Mr. Mahoney will be to drive the group’s F&B strategy in the region: making food and drink the heart and soul of each hotel.

He will focus on product and concept development, aligned with each Accor brand, including overseeing restaurant, bar and event space design for new hotels and renovations. He will also champion the Group’s sustainability commitments across the food and beverage spectrum. Mr. Mahoney brings 30-years of global experience to Accor.

Accor has signed an exclusive partnership with celebrity Chef Maroun Chedid, famous for his many culinary achievements and concepts, such as Georgette and Ritage Garden, TV appearances on Lebanese station MTV, and more recently on MBC as jury of the internationally acclaimed show Top Chef.

The partnership illustrates Accor’s strategy to consolidate its position as the leading hospitality group in the India, Middle East, Africa and Turkey region.

Chef Chedid will bring his bold twists on contemporary classics and Mediterranean cuisine through his first restaurants and concepts across Accor hotels in the region.

Chef Hugo Coudurier proudly returns home, after nearly 20 years touring the world, to head the brigade at Champlain Restaurant at Quebec City’s iconic Fairmont Le Château Frontenac.

The Quebec-native made a name for himself working in Michelin-starred restaurants and five-star hotels around the world.

Most notably, Chef Coudurier shone in Guy Savoy's three-star Michelin restaurants, becoming a renowned member of Chef Savoy's team in Las Vegas and Asia.

Chef Coudurier’s extensive experience helped him develop his culinary identity and deepen his understanding of the finest techniques.

AWARD-WINNING DINING

The lauded JAAN by Kirk Westaway has earned another coveted Michelin star, rising to a two-star ranking as it celebrates its fifth year of recognition since Singapore’s inaugural list in 2016.

Located on the 70th floor of Swissôtel The Stamford, the restaurant is known for its modern reinterpretation of British gastronomy through an innovative culinary lens.

Michelin inspectors praise the restaurant, helmed by Executive Chef Kirk Westaway, for embodying the quintessence of fine dining and its good use of amazing British produce to create a romantic restaurant that has it all – food, service, ambiance, and spectacular views.

Sofitel Sydney Darling Harbour’s French-inspired restaurant, Atelier by Sofitel, has received the highest wine industry accolade: receiving three goblets in the Australian Wine List of the Year Awards.

As Australia’s most prestigious awards program for wine and beverage lists, the Australian Wine List of the Year Awards highlight the talent, dedication and commitment of sommeliers and owners around the country.

This recognition highlights the strength and diversity of Atelier by Sofitel’s wine list, which features 96 wines and 28 wines by the glass, which are a complementary mix of Australian and French wines.

In the Canadian Rockies, the majestic Fairmont Banff Springs has been presented with the 2021 Canadian Interiors “Best of Canada” award in hospitality for its interior design of Rundle Bar.

The esteemed design award comes on the heels of the hotel bar’s $5 million refurbishment, which was unveiled in July 2020 and designed by Calgary-based FRANK Architecture.

The Rundle Bar boasts a two-story main bar with custom bronze and wood engraving, a rolling library ladder, and double-volume arches that were once part of the original building façade.

The space provides guests with a unique and stunning location in the heart of the hotel with the perfect après ski atmosphere complemented by an outstanding cocktail and culinary experience.

NOTABLE DEBUTS

Sofitel Adelaide has introduced French restaurant Garçon Bleu. Located on the hotel's ninth floor with unbeatable skyline views, the new dining venue is perfectly at home in the French luxury hotel chain.

The newest place to see and be seen, to celebrate, and share good food and wine, is led by Chef de Cuisine Gianni Delogu.

Chef Delogu has created a seasonal menu that makes French cuisine more accessible and fun featuring simple and ingredient-focused dishes in a contemporary space.

Mövenpick Hotel Melbourne announces the opening of the long-anticipated Miss Mi restaurant. Spearheaded by Borneo-born head chef, Esca Khoo, the restaurant features an intoxicating mix of dishes influenced by the cultures, cuisines, and aromatics of Asia.

The inclusion of fresh Australian produce draws on Chef Khoo’s commitment to local, sustainable food practices and his 15 years’ experience in kitchens across Melbourne, including Noma Australia, Dinner by Heston, Longrain and most recently, Lûmé.

Designed by global architecture powerhouse Grey Matters, the Miss Mi venue features a vibrant array of eclectic artwork, patterns, textures, and materials that give life to the space making it perfect for any occasion.

After undergoing an interior redesign by CUT Architectures agency, Pullman Paris Montparnasse didn’t stop there, the hotel also transformed its culinary style. Bringing America to Paris, Pullman Paris Montparnasse opens the doors to Umami Burger.

The beloved Los Angeles gourmet burger brand has stamped its passport and arrived in Europe with its first location. Located on the newly renovated second floor of the Pullman Paris Montparnasse, the space allows 280 guests to join in devouring the delicious burger creations.

The vibrant décor of Umami Burger Paris is inspired by Japanese street art. Samurais, Hokusai’s giant wave and geishas dance across the walls, creating a millennial playground that is equally suited for a gathering of friends and family, or for a moment alone enjoying a delicious meal.

Pullman Paris Montparnasse also welcomed Fi’lia - another famous culinary brand from America, with distinctly upscale Italian roots.

Set to open in 2022, the lavish interpretation of Italian cuisine can be enjoyed among an atmosphere reminiscent of 1930’s Art Deco mixed with Parisian elegance.

Fi’lia is where Parisians and world travelers will gather to celebrate life with good Italian wine and simple, sincere and generous cooking.

Fairmont Olympic Seattle opens the doors to its newest cocktail venue, The Founders Club. A secret entrance behind a bookcase in the hotel's lobby leads the way into a secluded and moody space, defined by deep, rich wood tones and the soft glow of brass.

Inspired by 1920s speakeasy culture, The Founders Club delivers an all-new, intimate and exclusive local experience serving up inventive cocktails designed by award-winning Beverage Curator Jesse Cyr.
