A fresh injection of fabled French flair will extend to Heathrow's dining scene with a new and exciting partnership. Gastronomic legend, Albert Roux, has been appointed as consultant to Brasserie Roux at the Sofitel London
Heathrow (http://www.sofitelheathrow.com/) at Terminal 5. Opening in June 2008 and enjoying direct access to the terminal building, the hotel will bring a swathe of Sofitel's world-class hospitality to Heathrow. This
collaboration is the latest exciting installment in the build up to the opening of one of the largest luxury hotels in the UK to be built before the 2012 Olympics.

Commenting upon Albert's appointment, John Donaldson,
executive director of the Sofitel London Heathrow said: "Our aim is quite clear - to lead the way not only as a world class hotel, but as a world-class dining experience, full stop. I am confident that Albert's experience and
knowledge will provide real inspiration for our head chef and the team."

As consultant, Albert Roux will oversee the development and
operation of the hotel's 100-seat fine dining restaurant, Brasserie Roux. The Brasserie will provide diners with the best of French regional cooking amidst a bustling, yet informal backdrop. The restaurant will boast an exclusive
boardroom for private use, as well as a 'Chef's table' giving guests the opportunity to dine within the heart of the kitchen. Working alongside Albert will be a head chef responsible for day-to-day operations.

Commenting on his appointment, Albert said: "I am really
excited to be involved in such a prestigious project. My aim at the Sofitel London Heathrow is to provide guests and visitors to the hotel with a culinary experience that is second to none. Brasserie Roux will enable diners
to forget their airport surroundings, allowing them to sit back, relax and enjoy world-class cuisine."

Albert Roux, OBE and Legion d'Honneur, is one of the world's
best known and best loved chefs. In 1967 he and younger brother Michel opened Le Gavroche, Britain's first Michelin starred restaurant, in London. In a poll of UK chef's carried out by Caterer & Hotelkeeper Magazine, Albert,
alongside his brother, was voted the most influential chef in the country. He is now a widely respected food consultant and publisher.
