Acclaimed three Michelin starred chef Chicco Cerea designs haute cuisine spa menu

Tuscany’s award-winning Terme di Saturnia Spa & Golf Resort has unveiled the first fruits of its new partnership with three Michelin-starred chef, Chicco Cerea with the launch of its new healthy haute cuisine spa menu. Drawing together ancient philosophies and contemporary scientific thinking regarding the role of diet in physical wellbeing, the new spa menu has been carefully designed by Cerea to nourish guests from the inside, and thus promote outward beauty.

Scientific research over the past 10 years has vindicated many long-held beliefs about the influence of diet on our appearance, demonstrating a causal relationship between what we eat and how we look, and between biochemical equilibrium and the body’s outer aesthetic. The latest cosmetics increasingly rely on nutrients such as vitamins, proteins, enzymes, fatty acids and essential oils – the very same ingredients that form the foundation of a healthy diet.

Recognising that mealtimes are becoming an intrinsic part of the modern daily beauty routine, the team of nutritionists at Terme di Saturnia teamed up with renowned culinary master Cerea to create a series of innovative degustation menus, designed to nourish face and body from within, whilst ensuring optimum levels of energy – and enjoyment! The healthy haute cuisine menus combine Michelin star standards of cooking with ingredients specifically selected to provide a wide range of health and beauty benefits. The meticulously designed dishes use the freshest seasonal fish, fruits and vegetables, wholegrains and delicate spices provide plentiful antioxidants, helping to neutralize free radicals to visibly reduce wrinkles; while beautiful presentation and flavour combinations provide the endorphin boost of simple sensory enjoyment.

Highlights of the new spa menu, and their health benefits, include:

Crispy red mullet with tomatoes and spinach in an apple and mustard sauce

Tomatoes are rich in the antioxidant lycopene, which also protects the skin from UV damage, helping to prevent premature ageing and skin cancer. Spinach is very high in antioxidants and has a range of anti-ageing properties relating to age-related mental decline, eye conditions and bone degeneration. Apple contains quercetin, which combats free radical molecules.

Slow cooked salmon with onion cream, mandarin and pumpkin seeds

Salmon is packed with essential fatty acids and powerful antioxidants such as carotenoid and astaxanthin, which also have anti-inflammatory properties. Mandarins are high in vitamin C, while pumpkin seeds are full of vitamin E, an important skin protector.

Soya milk reduction with exotic fruits and crunchy almonds

Soy products can boost collagen production. Exotic fruits such as mango, lychee, pineapple and papaya contain flavenoids and vitamin E, which have a natural anti-ageing effect, in addition to being a rich source of vitamins and minerals. Almonds are full of protein and antioxidant vitamins and minerals which combat the ‘free radicals’ which are causes of disease and signs of ageing.

Cleveland Collection (0845 450 5732; www.clevelandcollection.co.uk) can arrange a three nights stay at Terme di Saturnia Golf & Spa Resort from £735 per person, including Comfort Room accommodation with daily breakfast, return British Airways flights and private airport transfers.
