Chef Jack Yoss is appointed as Chef de Cuisine of Indonesia’s first W property – W Retreat & Spa Bali-Seminyak , set to open on 1st March 2011. An accomplished global chef who has served alongside some of the biggest names in the culinary world, Yoss will take the helm of the retreat’s Pan Asian concept restaurant, Starfish Bloo, where he will steer the creation and preparation of the menu and day-to-day operations.

“This is a thrilling opportunity to bring together my love of Pan Asian culture with my commitment to exciting, healthful and unique menus that both enhance our guests’ experience and broaden their palette,” said Yoss. “Our proximity to some of the world’s most pristine waters offers us an amazing selection of fresh seafood, as well as exotic fruits, vegetables and herbs. I’m excited to experiment with the characteristics of Pan Asian flavors, adding a twist of fresh, creative outlook each day to provide guests a sense of adventure when dining.”

Yoss has had an incredibly diverse and exciting culinary career, marked by experiences and fortuitous relationships with some of the world’s most renowned and beloved chefs. Yoss grew up in Las Vegas with a father who fostered a love of cuisine and cooking. He embarked on his career in Las Vegas, eventually landing a coveted job as a saucier at Wolfgang Puck’s exclusive Chinois Restaurant in Caesar’s Palace. Puck was an early fan of Yoss, and taught him about balancing flavors to create Chinois’ signature delicious and delectable sauces. Yoss then moved on to San Francisco – the home of innovative upscale cuisine – where he made a name for himself at Puck’s famed Postrio restaurant, working his way up from pastry cook to Chef de Cuisine.

While at Postrio, he worked alongside famed restaurateurs and brothers Mitchell and Steven Rosenthal, who supported and encouraged innovation and fresh ideas. During their tenure at Postrio, the restaurant was consistently listed as one of the West Coast’s top restaurants, receiving accolades and enthusiastic reviews from media and industry leaders alike. During this time, Yoss also met and began collaborations with the famed Chef Jacques Pepin, who mentored Yoss and nominated him for Food and Wine’s “Best New Chef’s In America” in 2004.

An avid adventurer and gastronome, Yoss eventually left San Francisco in 2005. He joined W Los Angeles as a chef at the hotel’s signature Nine Thirty restaurant. While at the W, he joined the 2006 Celebrity Chef Tour benefiting the James Beard Foundation, culminating in a rare opportunity to cook at the prestigious James Beard House, New York in year 2009. In 2007, Yoss moved to Portland to take the Executive Chef helm at Ten-01 Restaurant in the city’s hip Pearl District. Following this, Chef Yoss embarked a culinary expedition that took him from Alaska to Bali, with stops in Italy, Belgium, France, Vietnam, Malaysia, Thailand, Japan and beyond.

Chef Yoss first visited Bali in 2005 and was inspired by the people, the culture and, of course, the food. In creating the menus for Starfish Bloo and its service operations, Chef Yoss blends his affinity for the local culture with his love of Pan Asian cuisine. He is guided by his commitment to “raw, rare and naked” creations that capitalize on the island’s bountiful and honest freshness of seafood fare and fresh, exotic fruits and vegetables.

Chef Yoss’ innovative Pan Asian-inspired menu at Starfish Bloo will reflect a wide range of influence inspired by his work with both with street hawkers in Thailand and in the kitchens of W properties. Delicious and delightfully unique appetizers will include Kumamoto Oysters on the Half Shell yuzu ponzu, Japanese Trout Caviar, Purple Shiso Flowers and Carpaccio of Black Bass made with Pineapple Vinegar, Smoked Jalapeño Sea Salt and Crispy Leeks; or adventurous main courses, like Butter Poached Local Rock Lobster served with Hot and Sour Sweetbreads and Caramelized Pumpkin Puree and Soy-Mirin Braised Pork Belly with Lobster-Black Truffle Congee, Tokyo Scallions, and Crisp Parsnips.

Located in the uber-cool beachfront enclave of Seminyak, W Retreat & Spa Bali-Seminyak, set to open in March 2011, will be the region’s third W Retreat. The W will be home to Bali’s hottest new restaurants and night spots. Dining options will include Starfish Bloo, a casual, elegant seaside beach club overlooking the Indian Ocean open for lunch, brunch and dinner. Additionally, FIRE is a fun, unpretentious grill restaurant featuring a dramatic open kitchen that awakens for breakfast and sizzles at sunset, featuring the best fire-cooked prime meats and seafood. Rounding out the unique dining options is I Below, featuring a private room where a personal chef and wine expert will design a customized menu pairing original dishes with the perfect wine.

Bali’s hippest new nightspots include WooBar, a three-story epicenter of fun on the beach that serves up cutting edge exotic sips and snacks, hot DJ spins and a cool, sensual design. Beneath the multi-story chandelier, WooBar’s dance floor is a sea of electric colors and mirrors. Outside guests can luxuriate on glamorous rooftop daybeds, or at cozy cocktail tables, or near the surrounding pool. Located within WooBar is the Whiskey Lounge, featuring a striking LED-lit bottle display that lights up the sizzling Seminyak night. Open all day and night, W Lounge offers a colorful martini menu along with wine and with live DJ and bubble-licious afternoon tea on Sundays. Guests will enjoy plush lounge seating and a sun soaked deck, perfect for mixing and mingling. Or, catch a dazzling sunset at Ice, a cool beachside spot where guests can enjoy frozen cocktails or chilled champagnes along with artisan cheese and chacuterie. Finally, at Cellar, guests can slip behind the velvet rope and experience a personalized selection of wine tastings in the comfort of W Retreat & Spa Bali-Seminyak’s premium wine cellar.
