Senior sous-chef (M/F)



JOB DESCRIPTION
SUMMARY OF THE OPEN POSITION : 
The Senior Sous-Chef is in charge of managing his/her own outlet and overseeing the different teams of the kitchen in partnership with the other managers of the department.
 

. PRIMARY RESPONSABILITIES:
  • Research of new products to work with and creation of news recipes ;
  • Daily participation in food preparation ;
  • Management of her/his team;
  • During service, in charge of the line production (supervises and helps on the operation if needed) in order to guarantee the food quality and presentation in the respect of Four Seasons standards;
  • Responsible of the food sent out of the kitchen regarding presentation, taste, quality and timing;
  • In charge of the daily audit of the storage area (fresh, dry and frozen food) in the respect of the HACCP system;
  • Ensures that all the daily tasks have been correctly fulfilled;
  • Communicates and collaborates with all the managers of the resort regarding :
- Reservations
- Special requests
- VIP
- BEO’s /Parties
  • Ensures continuity between services by communicating all necessary information to the Sous-Chefs and other managers ;
  • Submit and communicates requisition to the Purchasing Service for operational needs taking care of the coming events, VIP, special requests, and inventory ;
  • In a day-to-day basis, collaborates with the Executive Sous-Chef to check functions for the Food & Beverage division;
  • Writes and verifies standard recipes for all dishes and ensure appropriate portions, taste and quality standardization by using Birchstreet system ;
  • Plan and organize the new menus and new recipes in collaboration with the managers;
  • Is committed to provide a high quality service, and in doing so, corrects or improves standards if necessary;
  • Report any complaint to the managers including guests’ and any other ones (equipment damage, staff requests or complaints,…) ;
  • Training of the kitchen teams to the use, maintenance and storage of the kitchen tools and machines. Get assured that the staff uses the personal protection equipment and the appropriate cleaning products ;  
  • Ensures the respect of grooming by the kitchen teams ;
  • Updates the information boards of the department ;
  • Work closely with the Assistant Stewarding Manager in order to maintain kitchen equipment in good conditions and to guarantee the cleanliness of the workplace;
  • Keep a positive attitude in any kind of situation ;
  • Support the other departments when requesting a crunch.

  • Demonstrates a high level of ethics, integrity and professionalism in any kind of situations

PROFILE
. PREFERRED QUALIFICATIONS AND SKILLS
  • A minimum of 3 years on a similar experience within the luxury hospitality industry ;
  • Very good knowledge in the HACCP system ;
  • Able to deal with the staff’s schedule and vacation;
  • Great management skills, knows how to motivate the teams and to connect with the employees;
  • Flexibility and cooperation sense to work harmoniously with the other departments;
  • Good computer skills ;
  • Languages :
- French : fluent or intermediate
- English : fluent or intermediate
