The production chef has primary responsibility for overseeing and supervising the producing of sauces, condiments, bases, butchering, mongering and overall mise en place set up for service. Works closely with the Chef de Cuisine and Sous Chef to ensure correct production and par levels for fluctuating service needs. Must work in close collaboration with the Purchasing Manager and kitchen administrator to assure all inventory is ordered against business demand. Must act as a team leader and motivator for kitchen staff, thus strong interpersonal skills and being a clear communicator is essential. Responsible for supervising, training, evaluating, coaching and counseling production team associates to comply with company standards
Assist in development, training and mentoring of staff and act as a resource to them.
Ensuring that all food safety and sanitation processes are being followed.
Monitor staffing levels to minimize cost and increase productivity while recommending staffing needs according to business levels.
Assign daily tasks and production lists for staff to adhere to.
Monitor the preparation of station assignments, support, and ensure organization and timely execution.
Coordinate purchasing of products with the Purchasing Manager and/or kitchen Administrator
Assuring that all products are properly and professionally butchered, mongered, portioned and prepared according to the menu and organizational standards
Perform all requests from the Chef de Cuisine and/or management team.
Attend and participate in all scheduled meetings and training sessions.
Follow proper time-keeping policies and procedures while controlling labor costs.
Know and follow all company emergency and safety procedures.
Strong problem solving and communication skills.
Exceptional time management skills.
Ability to stand or walk for 8-hour shifts and lift at least 50 pounds.
Must comply with all food safety procedure
