Mandarin Oriental, Tokyo is delighted to announce the debut of a new sushi restaurant, Sushi SORA. Sushi SORA –‘SORA’ meaning ‘sky’ in Japanese- is located on the 38th floor and features large floor-to-ceiling windows that offer breathtaking views of the dynamic city panorama and soon to be completed Tokyo Sky Tree®.

In line with the hotel’s elegant oriental interior, the hotel again worked with designer Ryu Kosaka, who has introduced the aesthetic principles of ‘Japanese beauty and ultimate simplicity.’ Mr Kosaka was the original creator of Mandarin Oriental, Tokyo’s award-winning restaurant and bar area on the 37th floor, and was excited to be involved in this new project. “I am immensely proud to have designed a new dining experience for Mandarin Oriental, Tokyo,” he said. To capture the ambience of serenity, the restaurant’s granite floors and onyx walls have been created around the traditional Japanese Hanchiku techniques, reminiscent of Japanese roof tiles. The restaurant features eight seats at an exquisite counter made of age-old Japanese cypress, forming a ‘stage’ for the sushi chef.

The Sushi Chef appointed to the new dining restaurant Sushi SORA is 37-year old Yuji Imaizumi who has 18 years of refined experience, and promises to enchant his ‘audience’ with his gracious and elegant hand movements, that can be observed when preparing sushi. Imaizumi is a true master of Tokyo’s authentic “Edo-mae” style of traditional sushi cuisine. Ingredients offering the best aspects of the changing seasons will be prepared differently according to the time of year. An avid scholar of fish, Imaizumi regularly interacts with the fishermen and the merchants of Tsukiji fish market, in order to ensure that guests receive the very best and freshest produce. Epitomising the concept of ‘simple is best’, Imaizumi’s authentic sushi will provide an exciting addition to the award-winning dining options offered at Mandarin Oriental, Tokyo. The hotel is located in Nihonbashi, an area often regarded as the birthplace of sushi.
