With 12 consecutive years heralded by three Michelin stars, Christian Le Squer has given proof of exemplary quality and consistency. He is a determined chef who defines himself as a creator of flavours and composer of tastes. Like a couturier or a perfumer, he shapes and assembles ingredients to enhance them and obtain the most exacting flavours with perfect coherence. As far back as his memories go, there are certain aromas coming from the sea that are linked to his native Brittany. They comprise the main thread that helps him to continually explore flavours and to create a harmonious culinary encounter.
Today a Parisian, Christian Le Squer aims to promote the art of living à la française at the heart of Four Seasons Hotel George V, one of the most prestigious hotels in the French capital and among the most luxurious in the world, by showcasing a French haute cuisine that is evolving, and by bringing a lightness that is distinctive from the opulence traditionally associated with the city’s palaces.
Christian Le Squer will create signature dishes for Four Seasons Hotel George V in keeping with its prestigious history and place in the world. His special touch will be recognized in cuisine that is traditional with a modern outlook in keeping with the times: aesthetic, elegant, colourful. While his greatest pride is in putting his personal touches on signature dishes that evoke a moment or a sensation, he also intends to offer a high-end gastronomical experience, with a strong sense of well-being that is so important today.

A craftsman of taste with vivacity and modesty, Eric Briffard maintained Le Cinq among the most elegant and refined tables of the capital, thanks to a classic and exacting cuisine featuring only high quality ingredients.
