Thursday 27 October, 2011, the greatest international ambassadors for the hotel and restaurant industry met in Lyon to take part in the graduation ceremony for the 19th class at Institut Paul Bocuse.
During this prestigious evening, 129 students from more than 20 nationalities were awarded degrees crowning the learning path of excellence that they have successfully completed. Under the presidency of the Minister of Tourism, Frédéric Lefebvre, Paul Bocuse, founder of the Institut, Gérard Pélisson, co-founder of the Accor hotel group, Michel Guérard, a famous chef and poet and patron of the class of 2011 as well as many consuls, demonstrated the confidence they had in “these young professionals in the hospitality industry who will lead the tourism economy of tomorrow” declared Gérard Pélisson, who is also the President of the Institut.
A ceremony filled with emotion marked their departure towards a horizon of extraordinary professions. And since the most beautiful realizations take their source from the wildest dreams, Hervé Fleury, director of the Institut, invited these young graduates to constantly “create dreams so that they may be the motor of life; the very condition required for performance”, a promise for their future happiness...

The Institut Paul Bocuse graduation ceremony gave honor to its students who have followed learning paths rich in passionate pedagogical projects and ambitious challenges. Through their many encounters, they were able to sharpen their know-how and strengthen their entrepreneurial spirit rivaling in creativity and audacity, which are essential for success in professional life.

“There is nothing more realistic than a dreamer because dreams enable infinite creation. Dreams have ambition, enthusiasm, frenzies, gaiety; they kindle the fire of imagination. A life without dreams is like a winter spell in midsummer;” convinced that “dreams are the future for mankind”, Michel Guérard chose to give a piece of advice for life to these young graduates full of enthusiasm, which was “never be late on your dreams”.

“Dreams are not an escape from reality, they embellish it. They are a vital element and an essential factor of progress. So that they may come true, you have to take action. Dreams cannot live on themselves, otherwise it would mean lying to yourself”, underscored Gérard Pélisson.

According to Hervé Fleury, the faculty of dreaming is a precious quality, “Dreams are a form of resistance, an off-road excursion that leaves the standardized behind in order to offer pure pleasure to guests”. It is in this sense that he wished a burning desire for students to make some of their dreams come true that will make them happy, and to “transmit their passion in turn”, concluded Frédéric Lefebvre.

Paul Bocuse dreamed of becoming a great chef. Today, he is the chef of the century. In an immense shared emotion and an extraordinary ovation, he received the demonstration of affection and recognition from the 1,200 people present on this occasion.
Graduates from the classes of 1993 to 2010, who are very attached to their Institut, also showed their support for this new generation of professionals.

By uniting youth coming from all the continents through a shared passion, that of the ‘art de vivre à la française’, this graduation ceremony is living proof of the international reach of Institut Paul Bocuse which is growing stronger each and every day.

The Institut is recognized internationally and is currently home to 420 students from 34 different nationalities; More than a hotel and culinary arts school; the Institut instills the values that will accompany these young professionals throughout their lives. Institut Paul Bocuse offers curricula in undergraduate’s degrees and Master’s Degree in International Hotel & Foodservice Management in partnership with the IAE at Lyon University Jean Moulin and Haaga-Helia – Finland.
In the framework of its Food & Hospitality Research Center, Institut Paul Bocuse also welcomes PhD students in order to study the practices, behaviors and values of these professions.
